Three-ingredient, High Protein Pistachio Ice Cream

I’m on a serious ice cream bender — and this pistachio one is the star. It’s high-protein,



cottage cheese-based (trust me), and straight-up addictive. I know I'm not the only one who’s obsessed with pistachio everything. So, I had to share the recipe here...

This sundae recipe came out of one of those late-night kitchen experiments—when you're craving something cold and creamy, but also trying to hit your protein goal (and not demolish a pint of store-bought ice cream in one sitting).


The cottage cheese makes this high-protein, ultra-creamy, and justifiably healthy enough to eat straight out of the blender. It’s rich, nutty, subtly sweet, and feels way more indulgent than it actually is. See for yourself!



Three-ingredient High Protein Pistachio Ice Cream Recipe


Ingredients

  • 2 cups cottage cheese

  • 1 cup shelled pistachio

  • 1/2 cup maple syrup or honey


Instructions

  1. Blend ingredients in a blender or food processor until smooth,

  2. Transfer to a storage container and freeze for 4-6 hours until firm.

  3. If freezing overnight, remove from the freezer for 30-45 minutes to soften before serving.


Top with crushed pistachios and extra maple syrup.
